Individual Skillet Huevos Rancheros

I have been super eager to try out my new Cost Plus World Market mini skillet.
 I know I have said that their store is amazing and you should check it out already but.... seriously you have to go!
While I have 2 other fun recipes that I am wanting to try with these lovelies I opted to making 
Huevos Rancheros. They were super easy to make another great thing about this recipe is that you can get creative with the ingredients you decide to use and while chose to make this for dinner you can make it for breakfast or brunch (best meal of the day)

Huevos Rancheros

I am all about easy meals and since it is still in the 100's here in AZ I don't really want to be in the kitchen for too long .

Prep Time: 15 Min
Cook Time: 15 Min 
Total Cook Time: 30 Min
Serves: 2
 Ingredients: 
4-5 eggs
4 small corn tortillas 
8 oz can of organic pinto beans (drained )
1/2 diced onion 
1 cup of salsa 
1 diced tomato 
olive oil
salt and pepper 
shredded cheese 
cilantro 


Instructions:
1. Preheat oven 400F. In an oiled pan onions saute for about 5 minutes then add pinto beans and any other veggies and S&P until they are cooked through ( In this case I added my salsa and tomato ) 

2. Lightly oil the skillets wit olive oil ( also coat the edges ) place either 1 4x6 tortilla on the skillet or 2 smaller ones like I used overlapping them a little. Oil the tops of the tortillas. Divide your bean and onion mixture in half and add to the pans. Now with a spoon make 1-3 small round indents (this is where your eggs are going to go ) Crack your egg into the little indents. Sprinkle eggs with S&P and shredded cheese. 

3. Finally add skillets to the 400F preheated oven for about 12 Minutes. When you see the eggs whites turn white and the yolks are done to your likeness go ahead and take them out garnish with cilantro and your done! 

4. *Bonus Recipe* Chipotle Sour Cream

Ingredients: 
sour cream and siracha 

Instructions:
Combine 3 Table Spoons Sour Cream and 3 tea spoons Siracha. Mix
Add mixture to the inside corner of a small plastic bag cut tip off and zig zag through the top your dish ! 
(Don't be afraid to go fancy with your design)

Blue Lemon

I have always been a fan of clean eating. Needless to say when I saw Blue Lemon
I knew I had to try it! 

Christopher and I have been a handful of times and every time we try something new but we always get the 
sweet potato fries (so good )
I go for the salad and Chris goes for the sandwich or tacos so it evens out
On the Left: Grilled Steak Tacos
On the Right: Raspberry Chicken Salad 
 Drink: Frozen Lavender Lemonade 

The inside is so very simple chic they have these big blue coaches for seating with modern chandeliers hanging above. 

Blue Lemon is located on Baseline Road in the Gilbert Area 
If you are looking for a great clean eating menu 
this is for sure the place!

Olive and Pink

Olive and Pink are probably two of my favorite colors for fall. I love the warmness of the green but the girliness of the pink. It rained so hard yesterday ! If you didn't hear AZ was flooded ! I woke up to kids splashing around outside saying school is canceled ! Only in Arizona right!  Rain Day!

French Onion Soup Recipe

 The past weekend Christopher and I stopped in to World Market (love that place) and picked up a few soup bowls and mini skillets! With the new bowls I decided to try something new and make soup. 
This french onion soup was super easy and Christopher loved it !

 Ingredients: 
1 Large Onion (Thinly Sliced)
Gruyere Cheese
Beef Broth 
2 Tbs Butter
Salt, Pepper, Thyme
French Bread (thinly sliced)

Directions:
In a pan melt butter at medium heat
Add sliced onions & cook until transparent 
(15 min , stirring occasionally )
In a pot boil broth with salt and pepper to taste and dash of thyme for 10 minutes
(I used 16 ounces enough for 2)
add cooked onions to broth then laddel into bowls
shred as much of the cheese to your liking
Toast sliced bread and add on top of soup
sprinkle with cheese 
Preheat oven at 350
place bowl in oven for 10 min till cheese in nice and melted 
 Take out and Enjoy 

I enjoyed making this! I can't wait to make more soups and warmer dishes in the fall !

Blue Mules

I hope you all had a fantastic Labor Day weekend! I know I did !
While fall isn't quite here yet in Arizona I just couldn't seem to wait one more second to wear
these amazing Blue yes Blue ! sling back mules from Franco Sarto ! (p.s they are so comfortable)

Dinner at : Isabel's Amor


When Christopher and I are looking for places to take pictures we sometimes see places that we say 
I think we need to try that place. Isablel's Amor is for sure one of those places ! I can't say enough about this place !  Authentic Mexican food with a cozy, fun atmosphere is exactly what you get here♥
The service was amazing and the food .. Delish!
 Christopher and I started with the the Mexicali Mule to drink it was so refreshing ! 
When it comes to Apps we like to try different things we ordered the Baja Shrimp Coctel (spicy, zesty shrimp salsa ) mouth watering goodness♥

 Poblano Chile Relleno :  An entire pablano pepper stuffed with a combo of gooey cheesiness: served with a homemade tortilla and rice and beans ♥
 Machaca Beef Torta: Served on fresh bolillo bread with a Jalapeno mayo and steak fries
 

Isabel's Amor is located in Gilbert, AZ and is Waiting for you to go and try it out
I'm thinking next time I'm going straight for the churros♥

Grey for Fall

 I have been on the search for the perfect pair of grey skinny jeans. When I saw that old navy had a some I went straight there. I tried these on and fell for them instantly. They were a perfect fit this petite lady loves old navy! I love how grey looks with fallish colors as in (mustard, maroon, and olive) 
I paired these amazing jeans with a lighter maroonish top from LOFT and my favorite faux leather vest from aeropostale. I was thinking about wear black booties but opted for these lovely ones from DSW (Qupid) the burgundy color is so eye catching .

Weekend Wear

Crepe-Bar : Tempe

One of my favorite things to eat is crepes ! I am not gonna lie I could eat them all the time! 
This weekend Christopher and I went on a late breakfast date to the Crepe Bar. I have been wanting to try this place ever since Amy from Amy's Vintage Closet  mentioned it on her Insta ! 

Trust me this is a place you don't want to judge by it's cover It is AMAZING ! This place 
has such a great atmosphere and the customer service is lovely♥

I got: Vanilla Bean with Strawberries (one word) Delish ♥
